Found ourselves hungry one night but too tired to drive to the store a few miles away. So we did something novel….went to the garden and picked our supper! With all the beautiful corn that’s available right now, this is the perfect late summer dish. Mix up the ingredients in this recipe to your liking.cornpasta3-300x225

 

Jalapeño Corn Linguine

What you’ll need:

Linguine

2-3 ears of fresh corn

1 jalapeño

Cilantro

1-2 limes

Parmesan cheese

Salt/Pepper

To Make:

Boil the pasta. While that’s cooking, slice the kernels right off the corn. Mix corn with minced jalapeño (avoiding the seeds), freshly chopped cilantro and fresh-squeezed lime juice, all to taste. When pasta is drained and ready, toss lightly with extra virgin olive oil, a bit more lime juice and freshly grated parmesan cheese. Season with sea salt and ground pepper. Add the jalapeño-corn topping and devour!

We recently had a little company retreat at our place with some special friends, big and small. On the last day before everyone headed home, we traveled down the road to pick blueberries at a local farm. The whole experience was rather like a moving meditation…it was a radiant summer day, we had the farm all to ourselves, and the only other noises we could hear (over Enrique’s shrieks of delight) were the sounds of country. And each of us found ourselves wandering off from time to time to bask in the sunshine — and the moment.

This week marks the 5th anniversary of our so-called farm life. And we’ll celebrate by having friends over from the city because sharing a little slice of the country is what we love doing most.
