We make tacos about once a week — skirt steak, chicken, fish, shrimp, veggie — they’re so easy for hectic weeknights. Mike found this tomato relish recipe a few years back and it’s become one of our favorite toppings. Hope you like it as much as we do!
Yellow Tomato-Tarragon Relish
3 ripe yellow tomatoes, cored and diced
1/2 small red onion, minced
1 serrano chile, seeded and mince
1/4 cup white wine vinegar
1/4 cup extra-virgin olive oil
2 tblsp fresh chopped tarragon leaves
Salt and freshly ground pepper
Combine all ingredients in a medium bowl. Season with salt and pepper to taste.
